I have been looking for a new breakfast recipe that is easy, healthy and tasty. I came across this recipe in my Vitamix handbook that sounded pretty good. The recipe is very easy, it takes less than 15 minutes to prepare all the ingredients and it’s a perfect addition to your breakfast routine.
The apricot bread turned out great! It was nice and earthy and moist and full of apricot and nut goodness! I really enjoyed the texture provided by the chunks of apricots and the pecans. I think I might just have a new favorite quick bread!

Berry Crumble with Orange Blossom Sauce

Living in San Diego, every day feels a bit like an early summer day. Over the weekend, I felt like embracing the sun and made a summery Berry Orange Crumble. I apologize if I am a bit ahead of the weather in your area, but the recipe will be around when you catch up! The crumble is perfect for summer, not too sweet and not too tart. I am using maple syrup instead of sugar and coconut oil instead of butter, which makes this dessert healthy and delicious at the same time. Fresh fruit crumbles are good any time of year as you can use whatever berries or fruits you have around. I love this recipe because it’s easy enough for busy, weeknight cooking and will be ready in 40 minutes. it’s perfect for a backyard barbecue, with a scoop of ice cream or orange blossom sauce!

I had some ripe bananas sitting on the counter which means time to bake or make a smoothie. Too many for a smoothie, so I chose cake. Couple of weeks ago I came across the “Healthy Chocolate Banana Bread” recipe from Lily at “Little Sweet Baker”. I love guilt free desserts, but this time I was feeling a little “naughty ” and decided to top the cake with a smooth and creamy mascarpone frosting. This cake combines the sweetness of ripe mashed bananas with cocoa powder and it tastes best the second day. Cocoa powder gives it deep chocolate flavor, and yogurt makes it tender and ultra-moist. You can top it with cacao nibs or chopped walnuts. Continue reading

Triple Berry Oatmeal Crumble Bars

These delicious berry bars are perfect for breakfast, dessert or a snack. It’s triple berry magic (blueberries, raspberries and blackberries) topped with walnut oatmeal crumble. The great thing about fruit and crumb bars is that you can substitute basically any fruit you have on hand or whatever fruits are in season and it will still be a satisfying seasonal dessert. These will disappear before your eyes!
