Summer is here, so it’s time for some refreshing treats! I was in Trader Joe’s the other day and came across these beautiful blackberries. First I thought that they will be a great addition to ice tea or maybe a blackberry mojito, but then I saw the fig butter and I got inspired and came up with this recipe. As the rest of you entering autumn, we are experiencing heat waves. I wanted to create something that combines taste of fall that was soothing in the heat. I used orange and pears for this recipe and spiced it with a little bit of cinnamon and dried ginger. I added just a touch of maple syrup to sweeten the popsicles and some cranberries at the end. Is there anything better than a cold healthy treat on a hot day! This recipe is one of my favorites and we have been enjoying it all summer! I love how the sweet honeydew mingles with the creamy and rich coconut milk and tangy lime in these popsicles. It’s a perfect balance. I added a touch of agave nectar to bring out the sweetness in the honeydew and to balance the lime juice. Just a pinch of cardamom will bring the flavor to a next level. This is definitely a healthy treat that will completely satisfy a craving for a cool, sweet treat!
I have been looking for a new breakfast recipe that is easy, healthy and tasty. I came across this recipe in my Vitamix handbook that sounded pretty good. The recipe is very easy, it takes less than 15 minutes to prepare all the ingredients and it’s a perfect addition to your breakfast routine.
The apricot bread turned out great! It was nice and earthy and moist and full of apricot and nut goodness! I really enjoyed the texture provided by the chunks of apricots and the pecans. I think I might just have a new favorite quick bread!
