Get cozy with creamy tomato goji soup 🥣 #vegan #nondairy #superfood #tomatosoup Soup is one of my favorite meals at this time of the year as it’s warming and easy to make. I made this variation of this soup few times now, it’s full of flavor and amazingly creamy. This is vegan tomato soup, no dairy at all. I used cashew nuts to build the creamy base. It’s more filling than a regular tomato b/c of the cashew nuts and the taste is amazing. To make this soup even more nutrient dense, I have added some goji berries powder & nutritional yeast. Goji berries ( I used @lostempireherbs) pair perfectly with tomatoes and known as a superfood and an antioxidant powerhouse. Nutritional yeast adds nice salty taste, similar to Parmesan cheese.
