I have been looking for a new breakfast recipe that is easy, healthy and tasty. I came across this recipe in my Vitamix handbook that sounded pretty good. The recipe is very easy, it takes less than 15 minutes to prepare all the ingredients and it’s a perfect addition to your breakfast routine.
The apricot bread turned out great! It was nice and earthy and moist and full of apricot and nut goodness! I really enjoyed the texture provided by the chunks of apricots and the pecans. I think I might just have a new favorite quick bread!
These delicious berry bars are perfect for breakfast, dessert or a snack. It’s triple berry magic (blueberries, raspberries and blackberries) topped with walnut oatmeal crumble. The great thing about fruit and crumb bars is that you can substitute basically any fruit you have on hand or whatever fruits are in season and it will still be a satisfying seasonal dessert. The ancient food of Aztec warriors, these nutritious little nuggets are rich in fiber, calcium, protein and omega 3’s. This mango coconut chia pudding is truly divine. Sweet. Creamy. Bright. Tastes like paradise in the glass and the texture is absolutely addictive. This recipe is so incredibly easy to make. Blend the mango and coconut milk in a blender until smooth creamy. Add a heaping tablespoon of chia seeds to one cup of a mango coconut mixture, stir well and refrigerate overnight. Top with dark chocolate shavings if desired.
