Easy Shrimp Tostadas

These light and refreshing shrimp tostadas are loaded with your favorite fixings! Quick, simple, delicious, healthy, and so fresh!

They make a flavorful, satisfying dish that can be served for lunch or light dinner. I served them with sliced avocado, radishes and roasted tomatillo and mango salsa.  so good…. This recipe is great for entertaining too. It makes a wonderful presentation along with salsa, guacamole, and a pitcher of margaritas.

Easy Shrimp Tostadas

  • Servings: 2-4

Ingredients:

For the Shrimp:

  • 1.5 lb large raw shrimp, shelled and deveined
  • 1 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 roma tomatoes, seeded and diced
  • 2 scallions, thinly sliced
  • 1 teaspoon chile powder
  • juice of one lime
  • 1/4 cup cilantro leaves
  • sea salt and pepper to taste

To serve: salsa ( i used Trader Joe’s Roasted Tomatillo & Mango Salsa)

Other Taco Essentials:

  • tostadas or corn tortillas
  • 1 sliced avocado, lime wedges, 2 medium radishes (thinly sliced), jalapeño, etc

 

Directions:

  1. In a large skillet, heat 1 tablespoon oil. Add garlic, tomatoes and scallions and sauté for couple of minutes. Add chile powder, salt, pepper, and shrimp and cook for 3-5 minutes. Add lime juice and cilantro leaves.
    Remove from the skillet and serve immediatly.
  2. Assemble the tostadas. Top shrimp with desired toppings, salsa and serve.
