I am finally getting around to upload some of my recipes from my instagram account. Today i am sharing couple of my favorite summer recipes!

Vanilla Rose Peach Compote

Vanilla Rose Peach Compote

  • Servings: 8-10
  • Difficulty: easy

Ingredients:

  • 6 ripe peaches
  • ½ vanilla bean
  • 1/2 tsp cinnamon
  • Zest and juice of 1 orange
  • 1 tablespoon dried organic food grade rose petals
  • 4 tablespoons maple syrup, plus more if desired
  • Pinch of fine sea salt
  • 1 tablespoon corn starch mixed with 2 tablespoons water

Directions:

  1. Slice open the vanilla bean lengthwise and scrape the seeds into a medium pot.
  2. Slice the peaches in half, remove the pits, and roughly chop.
  3. Put the peaches and the rest of the ingredients into a pot.
  4. Cover and cook the fruit on low for about 15-20 minutes, until peaches are soft and syrupy.
  5. Add corn starch mixture. Add more maple syrup if desired. Remove vanilla bean. Let it cool.
  6. Store in a tightly sealed glass container in the fridge for up to 1 week. Great with pancakes, yogurt, baked goods, etc.

Ingredients:

  • 3 frozen bananas
  • 1/2 cup canned coconut milk
  • 1/2 tsp of vanilla extract
  • 2 tablespoon agave nectar or honey
  • Juice of 1/2 lime
  • 1 tablespoon matcha powder

Blend and enjoy!

Ingredients:

  • 6 cups watermelon
  • Juice from 2 limes
  • 1 ripe peach
  • 3/4 cup kombucha
  • 2 tablespoons agave nectar if needed or to taste

Blend. Enjoy!

  • Servings: 6

Ingredients:

  • 1 cup coconut milk, full fat
  • Juice and zest of 1 lime
  • 2 tablespoons agave nectar or to taste
  • 1 teaspoon fresh mint leaves
  • 3 cups fresh fresh papaya, peeled and cut ( ripe papaya!)
  • Roasted nuts like pistachios (optional)

Directions:

  1. Blend all (except for nuts) at high speed in a blender. Taste and add more agave nectar if needed.
  2. Divide mixture among popsicle molds or cups. You can add some nuts at the bottom.
  3. Insert a popsicle stick into each mold, and freeze for about 4 hours or until completely frozen.

Ingredients:

  • 1 frozen banana
  • 1/4 beet root(~1/3 cup chopped)
  • 1/2 cup frozen blueberries (if using fresh then add couple of ice cubes)
  • 1 cup almond milk
  • 1/2 tsp vanilla
  • Pinch nutmeg

Directions
1. Combine all ingredients into high speed blender and blend until smooth.
Enjoy!
