Breakfast anyone? How about overnight oats with coconut milk, caramelized bananas, grated apple, fresh berries and tahini!

Sharing a totally easy and delicious recipe! Perfect for a lazy weekend or during the week to grab and go! I am totally in love with these overnight oats! Back to the kitchen to make more for tomorrow😋

Overnight Oats

Ingredients:

  • 1 cup rolled oats
  • 2/3 cup canned coconut milk
  • 1/3 cup filtered water
  • 2 ripe bananas, peeled a halved
  • 2 tablespoons tahini
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 apple, grated
  • 1/2 cup blackberries (frozen or fresh)
  • coconut nectar or honey, maple syrop, etc) optional
  • To serve: fresh berries, chopped nuts, hemp seeds, dash of acai powder

Directions:

  1. Warm up a frying pan and add a bit of coconut oil.
  2. Fry the banana halves for a few minutes until they are nicely caramelized.
  3. Blend first 7 ingredients in a blender. I prefer a little bit of a texture, so it doesn’t taste like a baby food😉, but it’s totally up to you!
  4. Add grated apple, blackberries and mix it. Refrigerate for at least 4 hours or overnight.

I served mind with a dash of acai powder, hemp seed, chopped pistachio nuts and fresh berries. So good!!!
