Blackberry-Coconut Popsicle with Honey and Fig Butter

Summer is here, so it’s time for some refreshing treats! I was in Trader Joe’s the other day and came across these beautiful blackberries. First I thought that they will be a great addition to ice tea or maybe a blackberry mojito, but then I saw the fig butter and I got inspired and came up with this recipe. This is a great addition to my growing collection of home made popsicles and a perfect treat on a summer day! Hope you give it try! Check out my other recipes:

Honeydew Coconut-Lime Popsicle

Blackberry-Coconut Popsicle with Honey and Fig

  • Servings: 8
  • Time: 15 min
  • Difficulty: easy

Ingredients:

  • 1 cup coconut milk, full fat
  • Juice and zest of 1 lime
  • 3 tablespoons honey or to taste
  • 1/4 cup fig butter
  • 3 cups fresh blackberries

Directions:

  1. Blend all at high speed in a blender. Taste and add more honey if needed.
  2. Divide mixture among popsicle molds or cups. You can add some fresh sliced berries.
  3. Insert a popsicle stick into each mold, and freeze for about 4 hours or until completely frozen.
