Persian Mashed Potatoes



Exotic take on mashed potatoes. This is a great side dish! If you tired of traditional mashed potatoes or want to try something different, this is a great recipe and goes well with grilled steak, chicken or roasted vegetables!

Serves 4
Preparation time: 20 minutes
Cooking time: 40 min
¼ cup olive oil
3 large russet potatoes, cooked, peeled, and grated (save ¼ cup water from boiling the potatoes)
1 large onion, chopped
1 medium carrot, peeled and grated
1 cup fresh or frozen green pees
1/4 teaspoon turmeric
½ teaspoon paprika
Pinch cayenne or to taste
1 teaspoon sea salt or to taste
1/4 teaspoon fresh ground pepper or to taste
2 tablespoon parmesan cheese, grated
¼ cup fresh dill, chopped
  1. In a large skillet, place the oil, onion and carrot and cook over low heat for 15 minutes until golden brown. Add turmeric, paprika, cayenne, frozen green peas, salt and pepper and cook for 2-3 minutes.
  2. Add grated potatoes and mix everything well. If it’s too dry, add one tablespoon of saved potato water at a time. Cook over low heat for 5 minutes. Add grated parmesan cheese and chopped fresh dill.
  3. Adjust the seasoning to taste. Remove from the heat.
